Dinner FAIL.
Dinner was a bust tonight. The crock pot failed me. What was supposed to be an awesome, yummy meat-and-potatoes dinner turned out to be a hot mess.
I've made meals that we wouldn't make again, but this brings the "grossly inedible" count to two.

The 2010 Wedding Season Opener - Paul & Erin, March 2010
Once again, Wedding Season is upon us. We started out with a whirlwind weekend of traveling for my cousin Erin's wedding in South Chicago, and then back to St Louis right after the ceremony. My mom did the honors of taking some great shots at the reception, and I am so sad we missed it.
The ceremony was one of the best I've seen. The priest had an amazing speech at the beginning, which stuck with both The Fiance and I: "Everyone will look at you differently now. You're married. All other relationships in your life fall away now, because you belong to each other first and foremost." Loved that.
The cake topper is the same from my aunt and uncle's wedding. You know me and heirlooms, I love this!

White Chicken Enchiladas

Very delicious noms!
White Chicken Enchiladas
1 lb chicken breast, cooked and shredded
2 T low fat butter
3 T flour
1 1/2 can ff cream of chicken soup
14 oz chicken broth
8 oz green chilis, diced
10 oz ff sour cream
1/2 C diced green onions
6 oz low fat shredded cheddar cheese, divided
10 low fat tortillas
Preheat oven to 350F. Melt butter in a saucepan. add flour; stir with a wire whisk until smooth. Add chicken broth and stir until thick. Add soup; mix. Add chilis, salt, and pepper to taste. Cook until thick and bubbly. Remove from heat. Add sour cream, stirring until thoroughly combined. Pour half of sauce mixture into the bottom of a greased 9x13 baking dish. Stuff the tortillas with chicken, cheese, and green onions (leaving some cheese aside). Lay rolled tortillas in prepared pan. Pour remaining sauce on top. Sprinkle with remaining cheese. Bake 20-25 minutes or until hot and bubbly and top is slightly browned. Adapted from WW boards

Spring is HERE!
I've got crocuses appearing in the yard. The days are getting longer. Daylight savings is in like 5 minutes. It's happening! It's happening!
So what are we going to do about it? Go shopping.
We picked up a few fun things at Old Navy last weekend - we got some nice bang for the budget, at least.

Races are fun.
On a whim, I headed downtown yesterday morning with a friend from work. The annual St Louis St Patrick's Day Parade was taking place at noon, but first the also annual Parade Run: 5 miles through the heart of downtown.
We started in the shadow of Busch Stadium, wound through city streets and SLU's campus, and ended back at Ballpark Village. It was a sea of green, loads of fun, and very festive. We ran most of the first two miles and then settled into a walking pace and enjoyed people-watching the 20,000+ participants.
Many runners were in holiday costumes. We saw beer hats, kilts, clover boxers, and knee socks. We were passed by a giant Gumby and several participants with beers in hand. At one point, we went by a keg on wheels, pushed by a team. Something tells me my next race in April won't quite be like this.
Or do they give away free beer at the finish line at every road race? I should have started running a long time ago!
How are you celebrating your St Pat's? Any fun races or festivities in your neck of the woods?

Thrilled beyond measure!
I love Love lately!
And that's not the most impressive part. Linds and her future-hubs are planning their wedding for August. Yes, THIS August! After an intimate wedding in South Carolina, they will be inviting friends and family to celebrate in September. With any luck, we'll be perfectly coordinated with returning from the honeymoon and seeing the newlyweds.
So that makes three of us ... Bmaid Kate, Linds, and me. We were very close in college and now we're getting hitched all within weeks of each other. Funny how that works out, no?
