Angel Chicken

When something goes right in the crockpot, I usually see it as an exception rather than the rule.  I don't know what it is, but most things that go into the slow cooker do not come out tasty.  But exceptions are nice.

 Angel Chicken
1 pound boneless, skinless chicken breasts
1 cup light chive and onion cream cheese
1/4 cup white wine (Reisling ... + more to marinate the chef)
1 package garlic and herb-flavored salad dressing mix
1 can undiluted cream of mushroom soup
2 T unsalted butter

Prepare crockpot with nonstick spray.  Place chicken in the bottom.  In a microwave-safe bowl, mix together cream cheese, mushroom soup, and butter.  Microwave two minutes to soften, stir to blend.  Mix in dressing package and wine.  Pour mixtureover chicken.  Cook 4-6 hours on low.  One hour before serving, remove chicken from crockpot and cut into small pieces.  Serve chicken and sauce over mashed potatoes or whole wheat pasta.
It's not pretty food, but my it is tasty.

  1. I will try this on one condition... (I'll try it regardless, we both know that). A few (by "few" I think like one or two) of your recipes have called for the garlic/herb salad dressing mix. Can you snap a picture of that stuff? I always just see the ranch mix.

  2. Those were my super girly single chick dishes. I loved them. We now have man-friendly cobalt blue ones. This goes to show the lag time I currently have between making a recipe and blogging about it. I am a lame food blogger.

  3. Haha, I was going to comment on the pretty dish too. Also, "more to marinate the chef" might be my fave part of this recipe.

    I don't have a slow cooker, never used one, but recipes like this are making me think twice.
